This is a great way to eat Kale, rather than the usual steamed with sunday roast. l love it, and it is easy. Here I have used Calvado Nero a dark kale. Ripe avocado is a must so it is nice and soft. The Pomegranate seeds add additional colour and texture so although they are not essential, add a good element to the dish. Please enjoy.
300 g Kale
For the dressing
2 tbsp. Tahini
2 tbsp. natural yogurt
2 tbsp. soy sauce
2 tbsp. olive oil
1 clove garlic finely chopped
1 small green chilli deseeded and finely chopped
juice and zest of 2 limes
bunch of basil leaves torn into small pieces
For the topping
2 avocados chopped into bite size pieces
2 tbsp. lemon juice
seeds of 1 pomegranate
good handful of mixed nuts such as pine nuts pumpkin seeds
This is so easy..
put all the dressing ingredients into a bowl and mix together,
take the kale, remove the stems and veins and cut into bit size pieces,
add the kale to the dressing ingredients and leave to marinade for 4/5 mins,
turn into a serving bowl, add the topping ingredients, and mix gently with your hands.
Serve with roast chicken and fresh bread…. and a glass of white wine!… enjoy
