Meringues

Meringues are one of my favourite uses of eggs and they are easy to make.  I usually make in double batches and keep them in an airtight container where they will last for a couple of months.  Any unexpected guests will often be fed on meringues.

Ingredients

3 large egg whites

165g golden caster sugar

 

Method  

Turn the oven on to 140C gas mark 1

Place the egg whites into a large clean mixing bowl and whisk until soft peaks

Add the sugar a spoonful at a time, whisking in between

Spoon the mixture onto parchment on a baking tray, I don’t worry about them looking even

Place in the oven for 30 minutes, turn the oven off, but leave them until they cool.

That is it!  eat with cream and fruit, lemon curd and chocolate curls, you cannot go wrong. Yum.
