Friends are coming for Easter so, as I only really like to make easy food, I have gone for chocolate brownies adapted for Easter which are quick as well as easy.
Ingredients
4 Eggs (I am using my Bantam eggs which are small so I am using 7) 100g dried mixed fruit 50ml orange juice 260g light muscovado sugar 300g dark chocolate 70% or above 80g plain flour 110g butter 75g golden syrup 75g Marzipan 1/2tsp Nutmeg 1tsp Cinnamon
Method
Pre soak the fruit in the orange juice along with the nutmeg and cinnamon, ideally overnight, but as long as you can if you forget. line the baking trays with parchment. Pre heat the over to 190C, 170C for fan, gas mark 3 In a large pan melt the butter, sugar and syrup until has a good shineRemove from the heat and add the chocolate, stirring until all melted Whisk the eggs lightly then add to chocolate mix Add soaked fruit and flour Pour into a tin, 18x28x3cm deep... or if you haven't got one that size you want it to be in tins 3cm deep, so I use 2 tins.
Grate the marzipan on top then sprinkle with a little more sugar. Cook in the oven for 15 to 20 minutes when it is brown but the middle is still soft. Cool, and IDEALLY..... chill in the fridge overnight. If you can manage not to eat it there and then you are a better person them me! Enjoy
