Beetroot and Chocolate Cake

Beetroot are so easy to grow, seeds in pot, seedling in ground, after a few weeks,pull out of ground!

I grow a mixed variety so I have the traditional beetroot red, but the less seen, orange and yellow varieties.

Beetroot is also extremely hardy and I leave them in the grown until I need them.  Now we are in March and I still have a few left, so lets make a cake.




250gram cooked beetroot, skinned and diced. 
3 eggs
200 ml sunflower oil
175f self raising flour
200g caster sugar
1tsp baking power
50g cocoa powder

icing sugar to sprinkle on top

preheat over to 180 C/350f gas mark 4
grease the bottom and sides of an 8" cake tin and 
sprinkle with flour
sieve flour cocoa, baking powder and sugar into a bowl
place beetroot into a blender and wiz until nearly smooth
add the eggs, one at a time and then the oil to the beetroot
add the beetroot mix to the dry ingredients
mix together
place in the cake tin
back for 45 minutes

If you double the recipe and make 2 you can put cream in the 
middle and make a thick double layered cake.
