Stir fry kale florrets with feta cheese

I still have lots of kale in the polytunnel, but it is now starting to “run to seed” which means it is overheating and thinking of giving up the ghost.  So to make sure it re-produces, it starts to flower.  If left, the plant will become tough and inedible unless steamed to an inch of its life.  But the flower heads are delicious.  They also add different colour to the meal as the flowers are yellow.

I also have broccoli doing the same. So into the polytunnel I went, with scissors cutting of the heads and making a quick and easy supper.

100g kale florets
200g broccoli florets
2 garlic cloves finely chopped
50g walnuts toasted or any seeds you have
200g feta cheese
2tbsp sunflower oil
3tbsp balsamic glaze

steam the kale and broccoli for 3 minutes
heat a pan, add the oil, gently fry the garlic, then add the kale and brocoli
season with salt and pepper
serve onto 4 plates and crumble the cheese ontop.

drizzle the balsamic glaze over the top

serve with crusty bread... and a glass of white wine.
