Smoked Salmon & Avocado

My recipes are normally seasonal, I put great importance in buying local food, I start with local butchers and end at supermarket and British products.  This is not just “buy British” and help the local economy or to reduce air miles but to try to eat in time with the seasons.  I don’t want to buy and eat strawberries in December which have probably travel half way around the world to get to me and taste so inferior to the real stars plucked from the garden in Summer.

But this recipe goes against that.  I am catering for family who need to take on calories and easy to eat food.

The Salmon is local and I have a little smoker, so that hasn’t travel far, the Avocados have come from South Africa! All I do is my best, no one is perfect and as long as I keep trying there has to be exceptions (for example chocolate)!

As with all my recipes, this is easy and quick.


340g smoked salmon
100g cottage cheese
200ml creme faiche 
1 Lime - juice and zest

2 ripe avocados 
1 Lime - juice only
good handful of coriander 


In a food processor add the smoked salmon and whizz till finely chopped
Add the cottage cheese. creme faiche, zest and juice of 1 lemon and whizz again
add salt and pepper to taste
Place in the fridge to cool

Stone the avocados and remove the flesh from the skin
put into a food processor and whizz until smooth this is easier if you have a 
hand help version. 
add the juice from 1 lime and the coriander and whizz until smooth
add salt and pepper to taste
Place in the fridge to cool

After around 15 mins, take both bowls out of the fridge,
Place the salmon mix into the base of 4/6 glasses depending on size
Place the Avocado mix on top being careful to keep separate.

garnish with some coriander and serve with fresh bread or toast.

If you want to heat it up a bit, add paprika to the salmon mix and Tabasco 
or Cayenne pepper to the avocado mix.
