I have never made shortbread before, I don’t know why, as it really is the easiest thing ever, and tastes great.
I was making afternoon tea for my mum and big sister (and I) to eat whilst watching the mens finals at Wimbledon. One of the items was the shortbread.
I crashed and banged about in the Kitchen, neither mum or my sister knew quite what I was doing, until I came out with my home made afteroon tea set on a homemade cake stand. I was really chuffed with the reaction! A bit of effort for a great reward.
Ingredients
150g Softened butter
210g plain flour
60g icing sugar
75g ground almonds
Method
Set the oven at 180oC In a bowl, cream the butter and sugar together sift in the ground almonds, sugar and flour gently with your hands kneed it all together to make a ball put in the fridge for 30 minutes with a rolling pin or your hands flatten so it is 5mm thick either use a cutter for round or a knife to square shapes. Place onto a baking sheet Place in the over for 10-12 minutes, until slightly browned. Allow to cool And Eat!!
