I was going to say I am sorry for another courgette recipe, but it is a good one, and there has to be ways to eat courgettes as I have lots of them. I will be letting as many as I can grow to huge marrow status as they will then last until at least Christmas as a good veggie alternative in time of cabbage and kale.
But for now, lets bake again, I make big biscuits but of course the small the mix is placed on the baking sheet the smaller and more dainty the end result will be.
100g courgettes grated 140g Self Raising Flour 2 tbsp baking powder 55g cocoa powder 75g butter 125g granulated sugar 60g Demerara sugar 4 tbsp yoghurt 1tsp vanilla essence
pre heat the oven to 180oC line a baking tray with parchment (to stop the biscuits sticking) cream the butter and sugar together once a smooth paste add the cocoa powder add yoghurt and vanilla extract continuing to mix throughout add the grated courgettes divide into 8 to ten balls and place on the baking sheet or smaller if you want smaller biscuits bake for 10/15 minutes
place on a cooling rack as soon as you are able to touch them… or eat whilst warm.
perfect on their own or sprinkled over ice cream
