Chocolate Chip Cookies

Who doesn’t like choc chip cookies?  As always these are easy to make, and I am pretending to be healthy, ha ha.

Instead of using plain flour I have swopped for rice flour, as such they are gluten free.  I use Bornville dark chocolate. The chocolate is left in chunks so you can taste it, so the better quality the better.

Ingredients

200g flour either plain, or as I have, rice flour
150g unsalted butter
170g sugar (caster is best but granulated will do)
1 tsp vanilla extract - adds extra taste, but if you don't have any in... 
leave it out
1 egg, beaten 
1tsp baking powder

150g dark chocolate, as higher % as you can. broken into small chunks

Method

Oven on to 160oC

line 2 baking trays with baking paper

put the butter and sugar into a food mixer and blast until you have a cream
add the egg and vanilla and mix again
sift in the flour and baking powder and mix again until all combined

add in the chocolate chunk and mix for a couple of seconds to distribute the 
chocolate
Take out a large spoonful of mix and, with your hands, roll into a ball

place each ball onto the baking sheets about 5cm apart

place in the oven for 13 to 15 mins, until nice and golden brown

take out of the oven and leave on the trays to cool or transfer onto cooling 
trays if you have them.
