Christmas is coming! and so lets make easy peasy brownies with a Christmas twist…

Ingredients 150g dark chocolate 125g unsalted butter 3 eggs 200g caster sugar 1tsp vanilla extract 125g plain flour 50g cocoa ½tsp baking powder 3tbsp mincemeat
Method
set oven at 180oC line a tin with tin foil or baking parchment, leaving it higher at the sides to help get the brownies out once cooked roughly chop the butter and place in a heavy bottomed pan and gently melt roughly chop the chocolate and add that to the butter, taking the pan off the heat stir until smooth. Allow to cool. put the sugar, vanilla extract and eggs in an electric mixer beat for around 4-5 minutes until pale and fluffy Beat in the cooled chocolate mix Add in the flour, cocoa and baking powder and fold with a metal spoon Then fold in the mincemeat. Pour the mixture into the baking tin, smooth the surface Place in oven for 20 to 30 minutes or until firm to touch, but still squidgy in the middle. Gently lift out of tin and place on a wire rack to cool.... if you can
Or just start eating it!!
I have friends coming round and we are heading out for a walk, brownies on return, I have mentioned at work I am baking mincemeat brownies and so everyone will be anticipating a slice with morning coffee so we had better not eat them all today!
