This really isn’t even a recipe it is so easy. The turmeric adds a bit of colour and different taste to it.
It is a meal in itself (for say 2) with garlic bread, or a side dish with say roast chicken, so would then serve 4. Of if a pig like me, maybe a smidgen left over for breakfast!!
Ingredients 1 pack of Halloumi a good glug of Vegetable Oil 1 Onion 2 cloves Garlic 3 small Courgettes 1 tin of tomatoes 1 tbsp Tomato Puree 1 tbsp Turmeric 1 tbsp Cumin 1 tsp Smoked Paprika 1 tsp Chilli Flakes Salt and Pepper
Instruction Dice the onions and finely chop the garlic. Chop all the courgettes into bite sized chunks In a frying pan which you are happy to put under the grill later, heat the oil Add the onion and cook them for a few minutes then add the garlic Once the onion and garlic has softened add the tomatoes and courgettes followed by the tomato puree, the spices along with a good sprinkling of salt and pepper. Cook over a medium heat for 20 minutes until everything is softened (at this stage you can leave it until ready, then just re-heat) Heat the grill to medium high heat. Remove the pan from the heat place the slices of halloumi across the top of the vegetables. Put the pan under the grill until all the cheese has melted and browned
yum! Did I mention it is great with either red or white wine. ha ha
